PORK ROGAN JOSH
Two of my favorite things are pulled pork and rogan josh. This recipe combines those ideas.
So - I’m stealing and modifying the ingredient list from Priyanka Mattoo’s recipe in the New Yorker and then applying it to the way I usually cook pulled pork.
I’ve made this with lamb, goat, pork and ….beef. The pork in my opinion is the best vehicle for this set of spices. My wife, Val agrees too, but she’s white. So why don’t you try and make this at home and let me know.

combine the Kashmiri chili powder, asafetida, ground fennel, ground ginger, garam masala, cardamom and two teaspoons of salt in a small bowl.
dry the pork with paper towels and rub the mix all over it
let that sit in the fridge uncovered overnight
pour the oil in a dutch oven and fry the whole spices
(cumin, cloves, cinnamon sticks, bay leaves, black cardamom)
now add the pork and brown on all sides
add enough water to submerge 3/4 of the meat
bake at 325 from for 3.5 hours, add more salt - to taste
let it rest for 10 minutes and then shred roughly with forks
serve over warm basmati rice with yogurt

6 Tbsp. neutral cooking oil
1 Tbsp. whole cumin seeds
6 whole cloves
4 cinnamon sticks
4 black cardamom pods
3 bay leaves
2–2.5 lbs. pork shoulder
3 Tbsp. Kashmiri red chili powder
1 pinch asafetida (hing)
4 Tbsp. ground fennel
1 Tbsp. ground ginger
1 tsp. garam masala
1 tsp. cardamom
salt
